Ingredients

Biscuits

  • 200g powdered sugar
  • 100g almond flour
  • 3 egg whites, room temperature
  • 1 teaspoon vanilla extract

Filling

  • 200g unsalted butter, room temperature
  • 350g powdered sugar
  • 3 tablespoons heavy cream

Method

1. Combine biscuit ingredients in food processor on low until texture is extra fine. 2. In a bowl, beat egg whites until soft peaks form. Add sugar gradually until stiff peaks. 3. Pipe into baking sheet and bake. 4. While the biscuits are baking, combine filling ingredients in a bowl and beat until light and fluffy. 5. Remove your biscuits from the oven and pipe in your filling on a single biscuit then place another macaron on top.
